As the beating heart of the hotel, it is a hive of activity, inviting guests and locals alike to sink into one of the velvet seats with a drink and a cuisine by renowned Australian Chef, Luke Mangan.

Every evening, head to The Wilmot Bar, where soothing jazz sounds are on repeat and a hosted bar cart adds a touch of warm Australian hospitality.
